The Rogan Josh dish is famous in Kashmir and was originally brought by the Moghuls. The unrelenting summer heat of the Indian plains took the Moghuls frequently to Kashmir which has a cooler climate because of its elevation and latitude.

Their food was found to be influenced by Persian cuisine providing an additional twist to the flavour.
